Veggie Loaded Taco Bowls

  1. Place ground beef in a nonstick pan over medium heat. Break into small pieces, add salt as you cook, then add the taco seasoning once most of the is completely cooked through. Add water according to directions on packaging and cook until water has evaporated and taco seasoning is well mixed.
  2. While the beef cooks, in another pan over medium-high heat, add avocado oil along with onions and pepper. Cook for 8-10 minutes, salting as you go, until peppers and onions are fragrant and slightly browned. Set aside once cooked through.
  3. In that same pan over high heat now, add a small amount of avocado oil along with the completely frozen Daily Harvest French Lentil + Leek Crumbles. Cook for 6-8 minutes, until browned and crispy.
  4. Lastly, whisk together ranch and hot sauce in a small bowl to desired spice level.
  5. Add romaine lettuce, cooked rice, black beans, some beef, peppers, then top with some Daily Harvest French Lentil + Leek Crumbles on top before layering on a bit of the hot sauce ranch. Serve with cilantro and lime wedges on the side.
